Seafood Friday and Shrimp Deelish

The seafood man comes to our local Costco on Friday's and I can never resist getting either some of his shrimp, lobster or crab legs. Sometimes I'll get a variety. Friday just isn't Friday without a Costco seafood run! I want to share with you one of my most fave recipes. This one is by Rachel Ray and I've made it many times. You can find it over on http://www.foodtv.com/. It's rated 5 star and has loads of great reviews. It's a super fast dish to make and chill for a party. I like it warm with a few veggie's and pasta too! I hope you enjoy it. Also, since I'm always interested in food(lol), I would just love it if you shared a recipe with me that you like. I love trying new and easy recipes!

4 Minute Spicy Garlic Shrimp - Courtesy of Rachel Ray

2 tablespoons extra virgin olive oil

4 cloves garlic, crushed away from skin

1/2 teaspoon crushed red pepper flakes

24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter

2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper (I've only used the steak seasoning she recommended.)

1 lemon, zested and juiced

2 tablespoons chopped parsley leaves, a handful

Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan. (I don't worry about leaving the garlic in the pan. Me loves garlic. Yum, yum.)

The Scubashack & The Almost Brothers

Thought I'd share our little get-a-way place in Florida. Here is a pic of the outside of what Clay & I named the "Scubashack". From the front door it's exactly 1 mile to a beautiful public beach. Clay is a passionate scubadiver, and I really hate to leave the pups at home. The pups are even allowed on the beach here. Yay, we're all in vacation heaven! We own the land the home is on and the backyard backs up to a 574 acre nature preserve. It's nice not to have neighbors behind. We're also on the intracoastal so we get to see the bridge go up and down and far off on the horizon we see the city lights of Palm Beach, FL. Believe it or not this little slice of heaven cost us over $100,000. about 5 years ago, and guess what? It went way up, and yep, it went back down! It doesn't matter though because we aren't interested in selling anytime soon. Do you like the little turtle I put above the door?

Here are some inside pics. I switched the table and chairs from where the couch was supposed to be and vice versa. I've already switched it back since this photo, so you savvy RMS decorators don't need to tell me it probably looked better the other way. It does, but sometimes I have to take a picture to see things right. haha I sewed these little curtains myself. Took me FOREVER because I've only sewed maybe 3 things in my entire life. Of which I don't know why, because I like sewing once the project is done. They are lined and everything! I know the rug is small, but hey, it's a weird area to navigate around in.The floors were already tiled when we bought it, but I painted the walls a light cream. Travel trailer walls look so much better painted. This little trailer is tied down and has been through the eye of 3 hurricanes. It's still here so I dropped the insurance. Well, hey, if they're made to be pulled down the road they can take a little wind! The mini blinds are an eyesore, so maybe I'll replace those with matchstick wovens one of these days. Or maybe we'll just put a new home on here. They have some real cute ones out there now.
The pic above is the sunroom. When I want to really impress someone I call it in a snooty tone of voice, "the downstairs salon". Of course then I have to refer to the area inside the travel trailer the "upstairs salon". LOL I've slipcovered the couch since this pic. Just wanted you to see that we have no back neighbors. Except for some florida wildlife that is. I sleep with the windows closed because when those skunks get mad, let's just say it doesn't smell like gardenias.

Are you wondering about The Almost Brothers? There was a local fireman's chili cookoff along with a live band line up going on one weekend. A girlfriend and I decided to go when Clay was out diving. I'll try and get pics of Clay diving on the next trip. The band playing during this particular hour is named The Almost Brothers because they sound like The Allman Brothers. Here is a pic of me in front of them playing. Not a large crowd, but they were good. A little self tanner on my legs would have been a good idea. Note on pic below me: When you go places with Sally, you get noticed. I try to stay a few feet away so I don't feel entirely invisible.

See what I mean? Sally's proud of those things too! The different fire stations all had their own booths set-up with themed chili they entered in the cookoff. Okay, I'm a happily married woman, but fireman are a pretty good looking chiseled lot of hunky men. It was hot, and I did think a good bit about fainting so I could have a little mouth to mouth ressutation (I can't spell this one Justine). Instead, I graciously accepted a picture taking opportunity with the jamaican theme guys. The lei around my neck was from the Hawaiian themed guys! All in all a pretty fun day!

Photo's and Blips of the Weekend

Hope everyone had a fun weekend! I'm trying my best to figure out how to get photos in the blog where I want them to be. I received some advice about cliking and inserting, but it didn't work. When I click it doesn't do a darn thing. Boo hoo. Now I'm trying to do it in the edit html section. I can't believe I'm doing this. Me, in edit html? I can't edit the clothes in my closet, let alone something on the computer! Okay, if this is going to work, the picture below this should be of my friend Melanie photo bombing a picture I took of my husband Clay on the left, and her husband on the right. We went out to dinner and then for drinks Friday night. As you can see, Melanie was all revved up in a party mood!

This next photo is when Mel & I met up the night before and decided that we needed to go out the next nite with the guys. Seems like we drink a lot, but I promise we only drink on days that end in a y. Just kidding. hahaha


I just tried to upload a pic of Clay in our boat when we were about to take off for a Sunday spin. Not too far though because boat gas is even more expensive than car gas! Anyway, it wouldn't let me upload the pic except when I clicked (small) because it said I'd exceeded my pic limit? Huh? Why does these things not happen to others I know? It's always something!!!

Now I'll post to see how it looks....
